Does anyone have any good suggestions to have for lunch at work? I don't like to do leftovers usually because I find them too heavy to have at lunchtime... I usually have soup or salad or sandwiches... |

How about unusual salads:
Asian Noodle Salad spaghetti, cooked and chilled snow peas Mandarian oranges red pepper slices scallions Salad greens of choice Asian Toasted Sesame dressing almonds for topping Or Buffalo Chicken Salad Boca brand meatless spiced chicken patties, cook, diced and chilled salad greens cucumber tomato celery carrot Blue cheese dressing You could also make lettuce wraps: a dap of left over rice, shredded meat of choice, grated veggie like carrot all wrapped up in lettuce leaf and have a dipping sauce handy. |
I use leftovers, but switch them up a little.
Roasts made in the crockpot turn into real good BBQ sandwhiches. Roast a turkey and debone it and freeze it in ziplock bags. Then you have yummy starters for salads and sandwiches or even soups. When I go out I order the bigger size, that usually is not that much more expensive than the smaller size. Then I take the extra home and have a wonderful lunch the next day that I didn't have to make (or do dishes). |
