no oven summer recipe
So I am willing to admit that I'm a big MN whimp! It's 90 up here, we only have A/C in the bedroom, and I DO NOT want to heat up that oven to make dinner! Can everyone chime in and share their favorite no oven summer recipes. Salads, grilled items, cold soups... whatever you've got, please share! |

Hmmm, can you TELL that I eat a lot of salads! 
Chinese chicken salad is always good...you can either get one of those rotiserie chickens from the grocery store or you can grill chicken... Romain lettuce, almond slices, those crispy chinese stick things, cabbage, green onion, mandarin orange slices (from a can)....and I've been seeing Chinese Chicken salad dressing in the dressing aisle lately, so that'd be good. Or greek salad...lettuce, olives, feta, tomatoes, red onion, chicken. Or Summer Salad...lettuce, blueberries, goat cheese, chicken, walnuts Caprese Salad...sliced tomatoes, fresh shredded basil, fresh sliced mozarella, salt, pepper, olive oil (sometimes balsamic). Or in the salad dressing aisle (or condiment aisle, I guess), where they have those pre-made marinades...those are pretty good--they have a lot of sodium, but if you go lightly on the salt on other things it isn't so bad. Grilled tilapia is good--it's pretty sturdy so it can withstand the grill. Grilled salmon is always good. Since you're PG you can't have tuna or swordfish or anything, but those are so good too. OOh, you know what's good...in the poultry section they have turkey tenderloin that is prepackaged and marinaded so all you have to do it plop it on the grill...they have a lemon marinade and something else... Grilled stone fruit is good too (like peaches and nectarines...) |
| I feel the exact same way! We make everything on the grill. We grill the corn, squash, zuchhini, peppers, meat, bread (the frozen ones work best I think). I think it is the Martha Stewart website that even has recipes for making desserts on the grill (I make a lot of frozen desserts in the summer though). The huge plus side is NO DISHES too! |
