I'm going to be having a party for them, with the gang from the radio station. I think there will be between 20 -30 people. Its not for dinner, but will be at 7 pm. People will be inside and out. And, and I suspect...lots of drinking! I'm not a very creative cook, so I help deciding what would be cool and fun (and EASY!) to serve! Ideas, please!!!! |

Tomato and Artichoke Tart Recipe courtesy Sandra Lee, 2007
See this recipe on air Friday Jun. 08 at 12:30 PM ET/PT. Show: Semi-Homemade Cooking with Sandra Lee Episode: Rose Garden 1/2 (17.3-ounce) box puff pastry sheet, thawed (recommended: Pepperidge Farm) 1/3 cup (about 5) oil-packed sun-dried tomatoes, drained and julienned, patted dry 1 jar marinated artichoke hearts, drained and patted dry (recommended: Cara Mia) 1/2 cup fresh mozzarella, torn into small pieces 1/2 cup goat cheese crumbles 1 tablespoon Italian seasoning (recommended: McCormick) Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper; set aside. Roll out each puff pastry sheet to a 12 by 14-inch rectangle. Place on the baking sheet and fold over the edges of each pastry to form a 1/2-inch border. Prick the bottom of pastry with a fork; set aside. Arrange tomatoes, artichoke hearts, and cheeses on puff pastry. Sprinkle with Italian seasoning. Bake in preheated oven for 20 to 25 minutes or until edges are puffed and golden brown. Cut into serving potions and serve hot. I made this for sue the other night when she came over....watch it though 'cause i kinda burned mine.....still tasted good...i also added shrimp... another thing easy and good is to take figs or dates cut them in half, spread some plain goat cheese on it and bake till warm....delic with a nice glass of wine! |
Cherry Tomatoes, Basil and Mozarella Skewers
On a skewer, alternate a cherry tomato, basil leaf and chunk of mozarella. Super easy and super yummy. You can make it as long as the whole skewer or, better for parties, just make it the size for one of each. Fruit Salad Skewers Alternate cantaloupe, melon, watermelon, apples, strawberries, whatever, on a skewer. Fresh Crudite Plate Since summer has such great veggies, make a dip and serve fresh baby veggies with it (like baby zucchini, carrots, green beans). Dip: 1 Cup Low fat plain yogurt 2 TBS fresh dill 2 TBS minced cucumber Squirt of lemon juice salt, pepper, garlic to taste. |
The ever popular spinach dip, follow the recipe on Knorr's Vegetable Soup box. Little sandwiches: use party rye (or pumpernickel). Add a package of Good Seasons Dry Italian dressing mix to 8 ounces of cream cheese. Spread thinly on the bread. Top with a slice (thin) of cucumber (use the English variety--it's seedless and the skin is thin), sprinkly dill (dried is fine) on top of the cuke.
