4 boneless chicken breast halves 1 (15oz) can marinated artichoke hearts, drained and minced (squeeze ALL the juice out ...and then squeeze the hell out of it again before chopping to get as much liquid out as possible or you'll be baking in liquid) 3/4C Parmesan cheese 3/4C half sour cream, half mayo few dashes of garlic pepper oven 375 degrees mix artichoke, Parmesan, mayo, and garlic pepper. Put chicken in greased dish. Spread mixture over evenly. Bake uncovered 30 min NOTES: I heated up bacon and crumbled into the mix and it was sooo good! |

...still not for a little while but probably later this month. I've become obsessed with cooking again. I've been trying so many cookie recipes. I was up until 1:30 a.m. last night baking! Bad part is I'm the one eating all this right now. |

Sounds delish. I make a version with artichoke hearts, sun dried tomatoes and mushrooms and use fat free half and half to make a cream sauce.

When he does come home (a few weeks away?)... he will be shocked at how much lil J has grown.
I can't wait for him to lay eyes on his ...not baby ...but little boy. Just thinking about it makes me so excited. He could barely touch the second drawer on our counter, and not he can tippy toe and reach the counter. He's a better counter surfer than a certain OES. |
