cornbread!

I'm having the worst craving for good, old fashioned right out of the oven cornbread! Can someone share with me a good recipe? I do have an iron skillet to use.

follow cornbread recipe on box....the secret is this though...

pour 1/2 of the mixture into your skillet...add grated cheddar cheese and 1 can of diced green chilis....pour rest of mixture over and add some more cheese....follow baking directions...yummy!
I actually like the plain old Jiffy Cornbread Mix!!!!!!!!!!!!!!!!!!!!
Another vote for Jiffy. Can't go wrong with it. Plus the price is right.
i use the jiffy for mine too...i just add the extra stuff...
I use the jiffy...when it is done melt butter over the top and then drizzle honey...mmmmm
Jiffy is good, and easy but it just doesn't seem to have that special something I've tasted in some "from scratch" recipes. Darce- that does sound good, but the peppers would make me miserable afterwards!
green chilis are NOT hot...they just add good flavor!

And plain old Jiffy does sound good.
I'm with you Darcy - love the green chilis. Add a pinch of
cayenne - perfect.

You may get closer to the taste you are looking for by
adding more melted butter to the bottom of the pan and
pour a little on the top. Add a pinch of salt and a couple
spoons of sugar to the batter itself. The mixes are a bit
bland and the salt and sugar bring the cornbread flavor
up a bit. Or, and I love this, make the batter a little
stiffer and bake it in a loaf pan, then slice and fry it in
butter and top it with really good chili.

Ok, now I'm wondering how fast I can whip this up for supper.

I think homemade adds a special touch to it! Took me 20 min to find it but this is what I used about 2 yrs ago. The family we had over and their 4 kids gobbled it all up! Sweet and fast!

Anyway, here's what i use!

1 C flour
1 C yellow cornmeal
1/2 C sugar
1 t salt
1/2 t vanilla
2 t baking powder
1 egg
1 C milk
1/3 C vegetable oil


Oven 400
spray pam or grease 9 inch round cake pan.

combine flour, cornmeal, sugar, salt & baking powder. stir in egg, milk, vanilla & vegetable oil until well combined. pour into pan.

bake 20-25 min. or until toothpick comes out clean!
MMMmmmmm cornbread... now I want some too!
Just had to tell you that I made Jo's recipe for the bread for my Easter dinner - everyone LOVED it!! It was nice and moist, too, so it didn't all crumble apart. Will definitely keep this recipe for future use!!
yum, yum.........I know I have the green chiles (Darcy's right, the regular green chiles are mild, it's the jalepenos that might be bothering you) and the cheese, it's the corn meal or Jiffy mix that might be missing. Grocery run tomorrow!!

With price of corn rising like an Atlas rocket, could be cornbread becomes a gourmet item.. :lol:
YAY! Glad you like it! I'll post my homemade crescent rolls when I get a chance. They're killer imo!
This is not a sweet cornbread, but this is the only way people around here cook it! lol It's very good, and the crust is awesome

2 cups cornmeal, 1 egg, over 3/4 cup but not 1 cup buttermilk, 1/4 cup water. Stir til mixed & not lumpy. Pour into heated pan with melted Crisco, cook at 325 until the bread pulls away from the edges of the pan (about 20 mins).
