Glad you got some. I have never in my life seen someone excited about getting some diced tomatoes with chiles in them. ...Plus, it's cute to see it always referred to as ro*tel.
Anyway, the simple answer to your question is chili and mexican food (esp salsas). My favorite chili recipe ever * 1lbs ground beef (or 1/2lb ground chuck & 1/lb ground turkey) * 1/2 onion, chopped * 1 t pepper * 1/4 t garlic salt * 1 can tomato sauce * 10 oz diced tomatoes w/chile (rotel) * 1/2 jar (8 oz) PACE picante salsa (or whatever kind, this is just my fav and i use chunky) * 2 T chili seasoning mix * 1 can of mushrooms (drained well) * 3/4 can of drained corn * 1 can of ranch style chili beans (some people prefer 1/2 can red kidney beans and 1/2 can of dark red kidney beans as the original recipe suggests, but us Texans love them ranch style chili beans) DIRECTIONS 1. In a large saucepan over medium heat, combine the ground beef and the onion and saute for 10 minutes, or until meat is browned and onion is tender. Drain grease, if desired. 2. Add the ground black pepper, garlic salt, tomato sauce, salsa, chili seasoning mix, mushrooms, corn, tomatoes, and kidney beans. Mix well, reduce heat to low and simmer for at least an hour. (after i mix the ingredients, I just stuff it in a crockpot for 2 1/2 hrs) It's the best! If I can find some of my mexican tortilla pie recipes, I'll post them in a sec. |
Hubby's Ro*tel dip
1 can of Mexican Festival Ro*tel and 1 box of Velvetta. Heat up in a pot until melted. Hubby serves this for parties with his homemade Tortilla chips. Yummy!! |
We have this and a similar recipe w meat and a few other ingred. once a week.
Burrito Pie 2 (15 oz) cans refried beans 1 C chunky salsa, divided 2 cloves garlic, minced 2 T chopped fresh cilantro 1 (15 oz) can black beans, rinsed and drained 1/2 C diced tomatoes (rotel) 7 (8") flour tortillas 2 C shredded Cheddar cheese to put on top 1 cup salsa 1/2 cup sour cream DIRECTIONS Preheat oven to 400 In a large bowl, mash pinto beans. Stir in 3/4 C salsa & garlic. In another bowl, mix together 1/4 cup salsa, cilantro, black beans& tomatoes. Place 1 tortilla in a pie plate (i use whatever casserole dish i have and don't have a problem). Spread 3/4 c pinto bean mixture over tortilla to within 1/2 inch of edge. Top with 1/4 cup cheese, and cover with another tortilla. Spread with 2/3 C black bean mixture, and top with 1/4 cup cheese. Repeat layering twice. Cover with remaining tortilla, and spread with remaining pinto bean mixture and cheese. Cover 1/foil. Bake 40 minutes. Cut into wedges, and serve with salsa & sour cream. variations: add 4oz can of chiles for more flavor to black bean mixture. can also add corn and shredded rotisserie chicken. |

And basically, Rotel tomatoes are just regular canned tomatoes with mild green chilies in them, so any recipe you'd normally make with canned tomatoes would be good... |

Where did he find Ro*tel in Chicago. I'm now craving Ro*tel dip like never before and I won't settle for inauthentic ingredients. |
