Preheat to 325f 1/2 lb soft butter (2 sticks) 1 lb box (or 2 2/3 C) light brown sugar cream together till fluffy Add: 1/4 tsp salt 1 egg 1 Tbsp flour 1 tsp vanilla 3 1/2 C quick oats Drop by rounded teaspoons on baking parchment lined cookie sheet. Bake at 325 8 -10 minutes or until lightly browned. These should be very flat and lacey looking, if they are not add a Tbsp or two of butter before you bake the next sheetfull. Let them cool for a couple minutes before removing them from the sheet, they will be very soft at first and will harden in a minute or two. They are very fragile and will break - eat the broken ones! This recipe tends to depend on weather and butter quality. I'm looking for my Rock recipe - I don't remember the actual measurements - I usually eyeball my recipes, so I have to actually look at this one. Shellie |

I know Mom substituted margarine for butter because I was supposed to have been allergic to dairy products.
She made them especially for me. I remember the broken pieces Yum!!! (I was not allergic to dairy products (didn't find that out until later), but I was put on a strict diet from the time I was 6 yrs old until I was 11 yrs old, No wonder I am so short. ) stupid allergists!! |

Be careful that you put them far enough apart on the
cookie sheet, they really spread. You can try margarine- but I don't think they will 'get'. Let me know if you do, I am interested to see what happens. I never use margarine myself, but if I am giving a recipe it's good to know. Shellie |
