4 cans black beans, drained but not rinsed 2 cans of chicken broth 1 large can of crushed or diced tomatoes 1 large onion chopped 10 cloves of garlic crushed 1 tablespoon worchester sauce 2 tablespoons chili powder 1 teaspoon ground cumin 2 tablespoons ketchup juice of 1/2 lime (I don't bother with this but the recipe calls for it) saute onion and garlic in a little bit of olive oil. Add all other ingredients and simmer fro about 30 minutes. Serve garnished with choices of : shredded cheese Sour cream crushed tortilla chips (I use the crumbles that are always at the bottem of the bag) This soup is especially good the next day!!!!! thinly sliced scallions |

I use 1# pepper bacon, small dice, slowly stewed till crisp and all the fat is out, then strain and set aside.
1 large onion diced and 2 fists of garlic rough chopped, slowly stewed in bacon dripping till clear. turn heat to high and add 1 cup of chillie powder and 2 tablespoons cumin powder. Stir untill it starts to smoke... now you need to make a serious decision... add 1qt beer and 3 quarts chicken stock, or... add 1 pint dark red wine (merlot is ok, but cab sav or surah is better) and 3.5 quarts chicken stock. let rise to a boil and then add black bean flakes. Add enough (it varies by company and your own taste) to create a thin, but solid soup. turn downthe heat until it is at a low simmer and let simmer for an hour. right before serving stir in or top with the bacon, top with sour cream and sliced scallions and a side of cornbread (your choice as to the style, they all work.) enjoy. |

I wonder if Fakin Bacon would work here...chop it up and sautee it a little so you can get that little bit of smoky flavor.
I think it's actually called Smart Choices bacon or something like that (it's not fakin bacon)... This sounds really yummy though |
