2-3 lbs of chourico 3 carrots sliced 2-3 lbs potatoes, cut up salt 3- 4 bunches of fresh kale 1 large cabbage, cut up 2 cans kidney beans(red) 5 medium onions , cut up ** Place shank bones, potatoes, onions, carrots and salt to taste in a large stock pan and cover with water **Bring to a boil until the potatoes are done **Without stirring, add cutup cabbage and kale, simmer 1/2-1 hour **Add chourico and kidney beans (do not stir) **Simmer another hour **Mash several of the potatoes and stir-this will thicken the soup **Simmer another 1/2 hour Stir well.
