Do the leeks go in whole, or diced / anything? |
Sliced crossways, wash the leek real well, cut the root off, then cut almost to the top. hope this helps? you can chop them if you wish.
When the potatoes are cooked you can squish a few w/ a potato masher it thickens the soup. enjoy! sue |
Potato leek soup is YUMMY. Only BE SURE you wqash the leeks well. I didn't know that leeks are kinda sandy if not REALLY REALLY REALLY rinsed well. Made for crunchey soup |
Explain Ginny the crunch is grit (dirt) that gets inbetween the leek layers. Yep, you have to slice them long wise and rinse very well.
I love leeks! BTW, I make the squash/kale risotto recipe I gave Darcy. Makes a ton! But very good. Hope it is good as left overs as we'll be eating on it awhile. |

It's ok, I need more fiber in my diet!!! I never used a Leek before, I thought you just washed them like grren onions before you cut them. HAHAHAHAHA! |
